Never miss a taco Tuesday! Am I right??! In my house we love Mexican food. But rice and tortillas to weigh you down?? NO WAY JOSE! Follow this recipe for a mild Ketogenic fix:
Ingredients:
- 1lb ground beef (80%:20%)
- 1/4c tomato paste
- 1/2c plain tomato sauce
- salt and pepper
- diced tomatoes
- Iceberg lettuce – shredded
- Trader Joes taco seasoning (without the nasties)
- Salsa of choice
- 1 avocado, diced
- Cheese of choice – I usually use pepper jack
- 1/4c fresh cilantro
Steps (Serves 4):
- Brown the ground beef in a medium hot skillet. When starts to brown, break up the beef with a potato masher.
- Add the taco seasoning, tomato paste, sauce, and salt and pepper. Reduce the heat and let thicken for about 5 minutes.
- To Plate:

- lettuce
- cheese
- tomatoes
- salsa
- avocado
- cilantro
