Spanakopita Flatbread

Keto friends!!  Who follows Maria Emmerich?? She is AMAZING!! She is my nutrition inspiration.  I love and adore her cookbooks and I urge everyone to purchase them on your iPads!  This recipe is hers and it is SOOO good!

Ingredients:

DOUGH:

1 3/4C shredded mozzarella cheese

2 tbsp butter

3/4C almond flour

1 egg

pinch of salt

TOPPINGS:

1/4c Trader Joe’s Greek Dressing

1/2C mozzarella cheese – shredded

1/2C crumbles feta

1/4C sliced green peppers

1/4C sliced red onion

GARNISH:

1/4C sliced black olives

halved cherry tomatoes

Extra dressing to dip 🙂

STEPS:

  1. Preheat oven to 425 degrees.  Put your pizza stone in the oven while it preheats. This heats up the stone and makes the bottom of your flatbread extra crispy.
  2. To make the dough: melt the mozzarella cheese and butter in a microwave safe bowl for 1 minute.  Stir well.
    1. Add the egg, and using a hand mixer, combine.  Add the flour and salt.  Using your hands, knead the dough for about 3 minutes.
  3. Pull the pizza stone out of the oven.  Sprinkle flour on the pizza stone.  Roll the dough on the stone until thin.  (If you don’t have a rolling pin- use a bottle of wine!! 🙂 )
  4. Spread the dressing on the dough.  Add the cheese, then pepper and onion.
  5. Bake in oven for 10 minutes.  Remove from oven and garnish.
  6. ENJOY!! 🙂
