It’s finally warming up here in DC. I made this stew to celebrate! This recipe is incredibly easy and so tasty. Low Carb dieters rejoice!!
Ingredients:
- Trader Joe’s Chorizo
- Trader Joe’s chicken sausage
- 1 medium sized chicken breast
- 2 Tbsp avocado oil
- 2 cloves of garlic, minced
- 2 tbsp paprika
- 1 tbsp oregano
- 1 tbsp cumin
- Salt
- Pepper
- 1 28oz can whole tomatoes + juices
- 2 cups chicken broth
- Freshly grated mozzarella cheese
Steps:
- Drizzle avocado oil in soup pot and place on stove at medium high heat
- Cut the chicken in 1″ strips. Put in pot. Remove chorizo casting. Squeeze chorizo in pot with chicken. Slice the sausage into 1″ rounds. Stir them into the pot as well.
- Let the meats cook for about 7 minutes.
- Add all spices to the meat mixture. Stir for about 1 minute.
- Crush each tomato in your hand into the pot. Pour the remaining juices in the pot. Add the broth.
- Sprinkle with salt and pepper.
- Let stew come to a boil, then reduce the heat to a simmer. Leave on for 1 hour to let the flavors blend together.
- Pour into bowls. Sprinkle fresh grated mozzarella cheese on top 🙂
