Chicken Broccoli Bake

Who else loves a super easy recipe?  I do!! Usually after my workouts and working all day, I like a healthy meal that takes only a few steps.  This Chicken Broccoli Bake is one of my cooking staples.  Tasty and filling!  Perfect Keto combination 🙂

 

Ingredients:

  • 4 chicken breast
  • 1lb broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2c mayo
  • 1/2c chicken broth
  • Salt and pepper
  •  1tbsp Old Bay Seasoning

Steps:

  1. Preheat oven to 375 degrees
  2. Boil chicken on medium high heat until cooked through (about 25 minutes).  Drain; shred chicken.
  3. Steam broccoli in microwave steamer (Check out this one from Pampered Chef).
  4. Add cheese, mayo, and broth to a bowl.  Stir to combine.  Add cooked broccoli and shredded chicken.  Add Old Bay, salt, and pepper.
  5. Add mixture to your favorite casserole dish.
  6. Cook for 20 minutes.
  7. Let it sit for 5 minutes.
  8. Serve up and enjoy! 🙂
