Pork Tenderloin with White BBQ Sauce

I am always looking for a new sauce or element to kick “boring” meat dishes up a notch!  This white sauce really did the trick.  It keeps “dieting” easy, fun, and flavorful.

Ingredients:

  • 1 pork tenderloin (1-2lbs)
  • 3 tbsp EVOO
  • Handful of garlic powder
  • Handful of paprika
  • Handful of onion powder
  • 1 bunch of asparagus
  • 1 can of diced green chilies
  • 1 cup mayo
  • 1/4 cup apple cider vinegar
  • 1 small bunch of parsley
  • Trader Joe’s Sauerkraut

 

Steps:

  1. Preheat oven to 425 deg.
  2. On a baking sheet, drizzle the pork with EVOO.  Rub it in.  Coat with all spices.
  3. On another baking sheet, drizzle asparagus with remaining EVOO.  Coat with salt and pepper.
  4. Bake pork in oven 20 minutes/pound.  Internal temperature should reach 150.
  5. Bake asparagus for 18 minutes until crispy.
  6. Meanwhile, make the sauce.  Using a blender or Magic Bullet, add mayo, chilies, and apple cider vinegar.  Blend until smooth.
  7. Pull pork out of oven.  Let rest for 10 minutes.  Slice into 1/2″ pieces.
  8. Plate:  asparagus, pork, Sauerkraut, sauce, parsley.
