I am always looking for a new sauce or element to kick “boring” meat dishes up a notch! This white sauce really did the trick. It keeps “dieting” easy, fun, and flavorful.
Ingredients:
- 1 pork tenderloin (1-2lbs)
- 3 tbsp EVOO
- Handful of garlic powder
- Handful of paprika
- Handful of onion powder
- 1 bunch of asparagus
- 1 can of diced green chilies
- 1 cup mayo
- 1/4 cup apple cider vinegar
- 1 small bunch of parsley
- Trader Joe’s Sauerkraut
Steps:
- Preheat oven to 425 deg.
- On a baking sheet, drizzle the pork with EVOO. Rub it in. Coat with all spices.
- On another baking sheet, drizzle asparagus with remaining EVOO. Coat with salt and pepper.
- Bake pork in oven 20 minutes/pound. Internal temperature should reach 150.
- Bake asparagus for 18 minutes until crispy.
- Meanwhile, make the sauce. Using a blender or Magic Bullet, add mayo, chilies, and apple cider vinegar. Blend until smooth.
- Pull pork out of oven. Let rest for 10 minutes. Slice into 1/2″ pieces.
- Plate: asparagus, pork, Sauerkraut, sauce, parsley.
