Jalapeño Chicken Chili

I made this a few nights ago and had to share it with you all! This Keto recipe is sure to impress. A bit spicy and very savory. Perfect for a cold night!!

Jalapeño Chicken Chili

Ingredients:

  • 1lbs shredded chicken breast (CHEAT: shred a rotisserie chicken)
  • 1 tbsp butter
  • 1/2 chopped onion
  • 2 cups chicken broth
  • 14oz diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp Chili powder
  • 1 tbsp cumin
  • 1 garlic clove (minced)
  • Trader Joe’s Sweet and Spicy Jalapeño peppers
  • 4oz cream cheese
  • Salt and pepper to taste

Steps:

  1. Cook your chicken by method of choice. I put 4 chicken breasts in my crockpot for the day. When I got home, I simply drained the liquid and shredded the chicken. Easy Peasy!
  2. In a large stock pot, melt the butter on medium high heat. Add the onion. Cook for about 3 minutes.
  3. Add the chicken, broth, diced tomatoes, paste, and all spices to the pot. Bring to a boil and then drop to a simmer for 10 minutes.
  4. Add the cream cheese. Turn heat back up to medium. Cook for another 10 minutes until the cream cheese has melted.
  5. Add the jalapeños.
  6. Serve up. Garnish with cilantro, shredded sharp cheddar cheese, and sour cream.
  7. Enjoy!!
