I made this a few nights ago and had to share it with you all! This Keto recipe is sure to impress. A bit spicy and very savory. Perfect for a cold night!!
Jalapeño Chicken Chili
Ingredients:
- 1lbs shredded chicken breast (CHEAT: shred a rotisserie chicken)
- 1 tbsp butter
- 1/2 chopped onion
- 2 cups chicken broth
- 14oz diced tomatoes
- 2 tbsp tomato paste
- 1 tbsp Chili powder
- 1 tbsp cumin
- 1 garlic clove (minced)
- Trader Joe’s Sweet and Spicy Jalapeño peppers
- 4oz cream cheese
- Salt and pepper to taste
Steps:
- Cook your chicken by method of choice. I put 4 chicken breasts in my crockpot for the day. When I got home, I simply drained the liquid and shredded the chicken. Easy Peasy!
- In a large stock pot, melt the butter on medium high heat. Add the onion. Cook for about 3 minutes.
- Add the chicken, broth, diced tomatoes, paste, and all spices to the pot. Bring to a boil and then drop to a simmer for 10 minutes.
- Add the cream cheese. Turn heat back up to medium. Cook for another 10 minutes until the cream cheese has melted.
- Add the jalapeños.
- Serve up. Garnish with cilantro, shredded sharp cheddar cheese, and sour cream.
- Enjoy!!
