Chicken Parm Pizza

I never knew this was even possible.  Maria Emmerich is a Keto Goddess!!  I saw this recipe in her “Restaurant Favorites” Cookbook.  I was a little skeptical.  Once I made it, I was told to make this recipe every week 🙂 And it was the easiest recipe to make! Check it out!

Ingredients:

  • 1lb ground chicken
  • 2 cups powdered Parmesan cheese
  • 1 container of Trader Joe’s red pizza sauce
  • Full basil leaves
  • Mozzarella cheese – sliced

Steps:

  1. Preheat oven to 425 deg.  Place pizza stone in oven to heat up while it preheats. (My favorite pizza stone)
  2. In a large bowl, mix the ground chicken and parm cheese with your hands.   Lay down a large piece of wax paper.  Spread the chicken mixture on the wax paper.  Roll it out like you would to a pizza dough.
  3. Remove the pizza stone out of the oven once preheating is complete.  Put the chicken “dough” face down on the stone.  Peel the wax paper off.
  4. Cook for 15 minutes.
  5. Remove “dough” from oven.  While still on the stone, spread the pizza sauce on the top.  Scatter the cheese and basil leaves.
  6. Bake for 7 more minutes until the cheese melts.
  7. Let sit for 5-7 minutes.  Slice and enjoy!
