Balsamic Gravy

Raise your hand if you love putting a chuck roast in the crock pot?  It’s one of my favorites.  The shredded beef is just wonderful!  Being a keto queen myself, I make this meal once a week.  My husband and I could just eat the meat plain, but the other day I wanted to kick it up a notch.  I added a balsamic gravy on top and O M G… it was AMAZING!

Ingredients:

  • 2 tbsp unsalted grassfed butter
  • 2 tbsp almond flour
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1/4 cup fresh balsamic vinegar

Steps:

  1. In a sauce pot on medium high heat, add the butter.  Let it melt and begin to simmer.
  2. Sprinkle the flour in the pot.  Use a whisk to stir for about 30 seconds.
  3. Add the stock and the cream.
  4. Continue to whisk for another minute or so.
  5. Add the balsamic. Whisk to stir.
  6. Lower the heat to medium.  Allow the mixture to thicken, about 5 minutes.
  7. Once the desired consistency, pour on top of the shredded beef.
  8. Enjoy!
