Who else loves a homemade quiche for Easter brunch? I do!! Substituting options can be difficult. Try out this recipe. It’s AMAZING!!! I promise!
CRUST:
1 1/2 cups almond flour
1 1/2 cups freshly finely grated Parm cheese
1/4 tsp salt
1 egg
SWISS SAUCE:
1 TBS butter
1/2C chicken broth
1C grated Swiss cheese
4 oz cream cheese
1 tsp salt
FILLING:
12 slices bacon (sliced into 1/4″ pieces)
Cheese Sauce (from above)
1/3C sliced leeks
4 eggs, beaten
3/4 tsp salt
1/8 tsp red hot pepper flakes

Instructions:
- Preheat oven to 325
- Make the crust first. Combine all ingredients in a large bowl. Stir well to combine. Press dough into quiche/pie pan. Bake in oven for 15 minutes.
- Meanwhile, make the cheese sauce. Melt butter in saucepan over medium/high heat. Once melted, add the rest of the ingredients. Stir to combine.
- Place bacon in a skillet over medium high heat. Allow pieces to crisp. Once cooked through, drain on paper towels.
- Pull crust out of oven. Sprinkle bacon pieces on crust.
- In a medium bowl, whisk together cheese sauce, leeks, eggs, salt and cayenne pepper.
- Pour mixture into pastry shell. Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C) and bake an additional 30 minutes.
- Allow to sit for 10 minutes before slicing.
