Super Easy Salmon with Garlic Tomato Sauce

Could this be any easier?!?

Ingredients:

  • 4 4oz salmon filet
  • 2 TBSP avocado oil
  • 14oz fire roasted diced tomato (Trader Joe’s)
  • 3 cloves garlic
  • 1/2 lemon – juiced
  • Parsley
  • salt and pepper

 

Steps:

  1. Heat avocado oil on cast iron skillet with medium high heat.
  2. Add garlic.  Cook until aromatic.
  3. Add diced tomatoes and parsley.  Stir to combine.  Let heat up for about 5 minutes.
  4. Make a well in the tomato sauce.  Add the filets to the pan.  Pour lemon juice over top.  Sprinkle with salt and pepper.
  5. Reduce heat to medium.  Cover pan.  Let cook for 12-15 minutes depending on thickness of salmon.
  6. Plate up with extra sauce on top and a side of roasted broccoli.  Enjoy!
