
Could this be any easier?!?
Ingredients:
- 4 4oz salmon filet
- 2 TBSP avocado oil
- 14oz fire roasted diced tomato (Trader Joe’s)
- 3 cloves garlic
- 1/2 lemon – juiced
- Parsley
- salt and pepper
Steps:
- Heat avocado oil on cast iron skillet with medium high heat.
- Add garlic. Cook until aromatic.
- Add diced tomatoes and parsley. Stir to combine. Let heat up for about 5 minutes.
- Make a well in the tomato sauce. Add the filets to the pan. Pour lemon juice over top. Sprinkle with salt and pepper.
- Reduce heat to medium. Cover pan. Let cook for 12-15 minutes depending on thickness of salmon.
- Plate up with extra sauce on top and a side of roasted broccoli. Enjoy!
