Queso Bacon Burger

Yepp- that’s right… you heard me… QUESO… BACON… BURGER.  Need a towel for that drool?  This recipe is amazing.

Ingredients:

  • Burgers:
    • 1lb 80% ground beef
    • 2 tbsp chili powder
    • 3 tbsp worcestershire sauce
    • salt and pepper
  • Queso Sauce
    • 2 tbsp salted butter
    • 2 tbsp corn starch
    • 2 cloves garlic, minced
    • 1/2 chopped shallot
    • 1 1/2c 2% milk
    • 1C shredded Gouda
    • 1C shredded sharp cheddar
    • 1 tbsp yellow mustard
    • 2oz green chili peppers (Trader Joe’s)
  • Other:
    • 1/2lb bacon, sliced into small pieces

 

Steps:

  • Queso:
    • In a saucepan, over Medium high heat, melt the butter
    • Add the garlic and shallots.  Heat up until clear and fragrant.
    • Sprinkle the corn starch over top.  Use a Whisk to combine for 30 seconds.
    • Whisk in the milk.  Let heat up and thicken, about 3-5 minutes.
    • Add the cheeses.  Whisk to combine.
    • Finish with the mustard and the green chili peppers.
      • stir to combine.
    • Set sauce aside.
  • Burgers:
    • Mix all ingredients together in a large bowl. Separate into 4 patties.  When forming, be sure the middle is thinner than the sides.
    • Grill to preferred temperature.
  • Bacon:
    • While the burgers are cooking, fry the diced bacon in a cast iron skillet.  Fry until desired crispy-ness.  I like it extra crispy : )
  • Plate up:
    • Lettuce (if low carb / keto)
    • burger
    • queso
    • Bacon
