Yepp- that’s right… you heard me… QUESO… BACON… BURGER. Need a towel for that drool? This recipe is amazing.

Ingredients:
- Burgers:
- 1lb 80% ground beef
- 2 tbsp chili powder
- 3 tbsp worcestershire sauce
- salt and pepper
- Queso Sauce
- 2 tbsp salted butter
- 2 tbsp corn starch
- 2 cloves garlic, minced
- 1/2 chopped shallot
- 1 1/2c 2% milk
- 1C shredded Gouda
- 1C shredded sharp cheddar
- 1 tbsp yellow mustard
- 2oz green chili peppers (Trader Joe’s)
- Other:
- 1/2lb bacon, sliced into small pieces
Steps:
- Queso:
- In a saucepan, over Medium high heat, melt the butter
- Add the garlic and shallots. Heat up until clear and fragrant.
- Sprinkle the corn starch over top. Use a Whisk to combine for 30 seconds.
- Whisk in the milk. Let heat up and thicken, about 3-5 minutes.
- Add the cheeses. Whisk to combine.
- Finish with the mustard and the green chili peppers.
- stir to combine.
- Set sauce aside.
- Burgers:
- Mix all ingredients together in a large bowl. Separate into 4 patties. When forming, be sure the middle is thinner than the sides.
- Grill to preferred temperature.
- Bacon:
- While the burgers are cooking, fry the diced bacon in a cast iron skillet. Fry until desired crispy-ness. I like it extra crispy : )
- Plate up:
- Lettuce (if low carb / keto)

- Bacon
