Refreshing and simple- how I like my summer recipes! Check out this delicious salmon recipe for a keto weeknight meal. Fast, easy, and delicious!

Ingredients:
- 1lb fresh salmon
- 2 limes- one sliced thin, one cut in half
- 1/2c EVOO
- salt
- pepper
- fresh dill
- SAUCE:
- 1/4c Trader Joe’s Mayo
- Juice of 1/2 lime
- 1/2c diced cucumber
- 1 tbsp fresh chives
- minced garlic
- salt
- pepper
- Shredded cabbage
- Sliced cucumbers (side dish)
Steps:
- Line the bottom of a large skillet with the lime slices.
- Pour oil over the limes. Put on medium/high heat.
- Put salmon on top the lime slices. Pour water over salmon until the filet are covered. Add the fresh dill, salt, and pepper to the skillet for seasoning.
- Poach the salmon until cooked through (opaque in color), about 10-12 minutes.
- Meanwhile, make the sauce. Add all ingredients together. Mix will to combine.
- Serve salmon over a bed of shredded lettuce and sauce on top.
- Slice cucumbers make the perfect side dish!
