Lime Poached Salmon with Creamy Dill Sauce

Refreshing and simple- how I like my summer recipes!  Check out this delicious salmon recipe for a keto weeknight meal.  Fast, easy, and delicious!

Ingredients:

  • 1lb fresh salmon
  • 2 limes- one sliced thin, one cut in half
  • 1/2c EVOO
  • salt
  • pepper
  • fresh dill
  • SAUCE:
    • 1/4c Trader Joe’s Mayo
    • Juice of 1/2 lime
    • 1/2c diced cucumber
    • 1 tbsp fresh chives
    • minced garlic
    • salt
    • pepper
  • Shredded cabbage
  • Sliced cucumbers (side dish)

 

Steps:

  1. Line the bottom of a large skillet with the lime slices.
  2. Pour oil over the limes.  Put on medium/high heat.
  3. Put salmon on top the lime slices.  Pour water over salmon until the filet are covered.  Add the fresh dill, salt, and pepper to the skillet for seasoning.
  4. Poach the salmon until cooked through (opaque in color), about 10-12 minutes.
  5. Meanwhile, make the sauce.  Add all ingredients together.  Mix will to combine.
  6. Serve salmon over a bed of shredded lettuce and sauce on top.
  7. Slice cucumbers make the perfect side dish!
  8. Enjoy!!
