Who doesn’t love some fried chicken and shrimp??? I can’t get enough. Especially paired with my favorite buffalo sauce… YUM!!! The recipe substitutes pork rinds with the traditional bread crumbs. Follow this keto friendly recipe to wow your entire family!


- Ingredients:
- 1 bag of Epic Pork Rinds (chose your flavor!)
- 2 eggs beaten
- ~1 cup of oil (whatever oil you have on hand. I prefer avocado oil)
- 1lb raw shrimp (shells off) -or- 1lb chicken tenderloins
- side of your favorite hot buffalo sauce (or whatever else you enjoy dipping in)
Steps:
- In your food processor, grind pork rinds until powder-like. Then pour into bowl.
- Beat 2 eggs in a separate bowl.
- Preheat oil in a deep skillet with oil. Pour enough oil to cover about 5mm in height in pan. Allow to get hot (will start to bubble).
- Dip chicken / shrimp in egg mixture. Then dip in pork rinds, covering both sides. Using a fork helps decrease the mess.
- Put meat in skillet. If using chicken tenders, allow to cook for 4 minute per side. If using shrimp, allow to cook for ~1-2 minutes per side.

- Plate up with your favorite side and sauce. Enjoy!!
