Cozy Chili Recipe

Usually Fall Sundays in my house are filled with candles, chunky sweaters, Ugg slippers, leggings, and an unlimited pot of Chili on the stove.  I make it early in the day so we can fill up a bowl whenever we are in the mood.  This recipe is my favorite and it’s so easy!! Check it out….

Ingredients:

  • 1lb ground beef
  • 1lb Trader Joe’s Chorizo
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • salt/pepper
  • 1/4c chili powder
  • handful paprika
  • handful parsley
  • 1tsp red chili flakes
  • dash of cinnamon
  • 28oz Canned Peeled Tomato
  • 1c beef broth
  • Jalapeno slices (toppings)
  • Sour Cream (topping)
  • Sharp cheddar Cheese (topping)
  • Corn Chips (topping)

 

Steps:

  1. Put a large dutch oven on the stove on medium/high heat.
  2. Add the onion.  Cook until translucent.
  3. Add the ground beef and chorizo.  Using a Pampered Chef Meat Masher   break up the meats.  Cook until browned.
  4. Add garlic and spices.  Stir to combine.
  5. Using your hands, squeeze each tomato, individually, over the pot.  Let the juices fill the pot.  Pour any leftover liquid from the can into the chili.
  6. Add beef broth.
  7. Allow to come to a boil, then reduce heat to simmer.  Cover the pot and let the flavors cook through for 45 minutes.
  8. Add your toppings and enjoy!! 🙂
